If a celphone doesn't have a signal for a long time, say an hour or more, does it affect the battery life?

Yes, it does.
The phone tries to get a signal and keeps searching for the network. This does use a lot of power.

I see.
How about if i keep my unit off instead of letting it to search for a signal and loose its power? Coz you know, i work 8 hours a day(sometimes 12)for 6 days a week and the place where i'm working has only very limited place where you can find a signal but i can't stay too long to those places. Does keeping my celphone off for hours affect my unit at all?

If you keep it of for longer, you will surely save some power.
But booting up a phone will cost some extra power, so I can't tell exactly if you will save at least, but I would say yes.
