In regard to the Nokia 6680, does anyone know how i can convert standard .MPEG Video files to a format that will play on my mobile phone.

Free solution:
Use Nokia Multimedia Player, it's part of Nokia PC Suite.

I don't know about 6680. I just got the phone myself but for my old 6230, I downloaded the Nokia Multiledia Player v1.1 from http://www.nokia.com/nokia/0,,75922,00.html.
Open mpeg files from within this application and save the file again in .3gp format. You can also set the size and length of the video to be saved as.
Then simply copy the .3gp files from the PC to SD/MMC card and watch them on your phone.

i would like to know that the .3gp files in my mobile have to be converted to a .avi or .dat extension. Can this be also done with the Multimedia Suite?

You can use Smartmovie to encode the files to DivX. They are much smaller in size than standrd MPEGs and also has good quality.

I am posting the entire readme which I got when I bought Smart Movie:
SmartMovie first aid information
Thank you for downloading SmartMovie software. With this software, you will be able to convert your movies from desktop PC into mobile-friendly format and play them on your mobile device.
This file will give you basic information to make you start up with movie conversion and watching on your device. You may find more detailed help in the SmartMovie Converter installed on your PC.
1. Opening videos in the converter:
If you don’t have done this before, you may need to install codecs on your PC so that SmartMovie Converter will be able to read videos.
Recommended codec packs are:
FFDShow
K-lite
Note: there’re many codec packs available on Internet for download. The above files are just our favorites. You may successfully use SmartMovie Converter also with different codecs.
Please install one of codec pack, which should let you play most video formats. If you have still problems, you may need to install additional codecs for your particular video files.
Note: opening RealMedia RM or QuickTime MOV files requires separate codecs which may be found on the Internet. Please see more in SmartMovie Help.
Basically, if you can open a video in Windows Media Player, then SmartMovie should be able to open it too.
2. Converting videos:
To successfully convert video, you’ll need to use correct video codec. The easiest way to set up things is to installing XviD codec for Windows, which can be found here: codec_xvid_win32.zip.
After installing, you just need to select this codec – in the SmartMovie Converter, click on Configure button in the Video settings area, and select "XviD encoder" as video codec. This will work fine. You may later experiment with other video codecs if you wish (DivX 5, 3IVX, etc).
Note: you should choose video codec, which can be played on the mobile device. Please see next point for explanation.
3. Setting up video player on mobile device:
After installing SmartMovie Player on your mobile device, you’ll need to install additional codec so that videos may be recognized. One such codec is downloadable here: codec_xvid_symbian.zip.
For your convenience, we’ve also added it to the zip package containing the software.
All you need to do is installing this codec on your phone (use correct version for your Symbian device). This codec will allow you to play back video in various video formats (DivX, XviD, 3IVX, etc).
In future, there may be other video codecs available for download.
4. Test before you buy
We offer our customers trial version of the software, so that they may test before buy. It is recommended to check if this software suits your needs, and if it is compatible with your device, before you decide you want to buy it.
