How big MMC card I can use??

The manufacturer advises that the Nokia 6230 use a maximum of a 512MB multi media card (MMC)

But up to 2 GB should work.
Some 1GB and 2 GB have been proven as working, but it is not the size that matters, it is the brand. Some brands won't work, some will. Which can't be exactly said.
Best thing is to go to a shop and ask the clerk if you can try the card first.
Or buy cards which are labeled as useable for phones.

In other word just go to shop and ask the salesman what size will work on ur phone

Even they can't really tell it (believe me: clerks are the worst guys to ask in 9 of 10 cases... okay, in a phone-shop the should know - I'm sometimes surprised how they got the job).
Even cards from brands which have been proven not to work might work. Some people did buy such cards and the do work.
www.mobymemory.com is quite a good onlineshop for memory cards because all cards do work.
Kingston has their own brand created especially for memory cards for mobile phone, they call it "MMCmobile". But their "MMCplus" should work too without a problem.
I personal only buy some NoName card and hadn't got a problem yet.
Nokia normally announces such limitation because they don't sell bigger cards
