I have a good one if you like coconut. My mother in law called it Cloud 9 Cake. Everyone wants it at all family get togethers in memory of her. She and her sister passed away in a house fire.
White cake mix
1 can of Coco Lopez
1 small bag of shredded coconut
1 can of Eagle Brand Sweet Condensed Milk (it's that thick, white sweet stuff)
small carton of Whipping Cream
Vanilla
Sugar
Make cake according to box. While still hot, poke holes all over it with a fork. Open the Coco Lopez and the Eagle Brand and pour both cans all over the cake. It will seem like it is going to make the cake all soggy and you will think something was left out. It just won't look good but keep going. The liquid will soak up in the cake. Sprinkle some of the shredded coconut on the cake. Put it in the freezer for about 30 minutes to an hour. Whip the Whipping Cream until it looks like Cool Whip. Add vanilla and sugar to taste. Take cake out of freezer and pour the whipped cream on top. Top with more shredded coconut. Put in fridge until ready to eat. This can also be frozen for up to 2 months.
