I also have this same problem. Music setting are not available. I have been reading and searching this forum, but can not find a direct answer to the "not available" problem. it seems to be common with the latest VX8300s.
I can sync Music with the VCast Music Manager version of Windows Media Player but I would rather add them through BitPim, so I can use my Mac at work. Verizon doesn't offer a Mac version of VCast software.

After some searching on another forum, it has been verified, that on the latest 8300s (software version 3), MP3s are automatically enabled, and do not need turned on through the service menu.
and I continue answering my own questions.
On the PC, I was ignoring the obvious. I wasn't using Sync mode, duh!
When Sync mode is selected in the Vcast menu, the Phone, along with Music Folder shows up in My Computer just like a Flash Drive. You can just copy songs directly in the My Music Folder if you want. I still think it is easier to use the VCast Music Manager, as it automatically organizes the files in the correctly named folders for browsing in My Music. I still haven't succesfully loade MP3s using BitPim, but I;m not even going to bother with it anymore, as I;ve just decided that the VCast software is the easiest way to go.
No if I can just figure out how to get it working with my Mac.

Just updated my Windows Media Player to version 11. Much Better! Now VCast software needed. VCast software was real buggy and locked up alot. WMP11 syncs MP3s natively and works great.

For all of you that have the LG 8600 and would like to play music from your SDcard i have found the answer. Ok Im going to assume that you know how to put your card in a reader and xfer mp3s from your computer. Here are the steps you must take to get your phone to recognise your mp3s on your SDcard.
1. Get 1 song on your SDCard(Note: (like 3meg file or somthing small - this song needs to fit in your phones memory b/c we will be transfering it manually later)
2. Put the SDCard in your phone and turn it on.
3. Goto Menu > Settings $ Tools > Memory> (make sure all save settings points to your SDCard)
4. Go into your card memory > My Music> THis is key now.
5. Hit options and move
6 Select that 1 mp3 that will fit on your phone
7. Once its selected hit Done and it will move it to your phone.(this may take a few minuites)
8. Once the transfer is complete Close your phone and hit the side volume button to make the Play/pause/forward/backward buttons to light up.
8. Hit and hold the play/pause buttion(the one in the middle)
9. at this point you should see "Adding music to library" or somthing simular to that.
10. Your one song will play now.
11. Stop your song by opening your phone and hitting clr a few times.
12. Go back to your memory settings > phone memory > my music > Then delete that mp3.
13. THIS IS IMPORTANT. Shut off yoru phone and remove the sdcard.
14. Put your sdcard back in your computer so you can see it as a removable drive and add all the music you want.
15. Put your card back into your phone and turn it on.
16. Close the lid and hit the side volume button to get your middle play/pause buttions to show up.
17. Hit and hold your play buttion. and VOLA it will start (from now on) searchign for yoru music on your card.
