First of all, even when my phone is in silent mode, the camera still makes those darn shutter sounds, is there any way to disable them?
Secondly, I do a lot of texting, and the phone stores messages to the sim card by default, which can only hold 30 messages, so I have to delete them frequently. Is there any way to set it so that it saves directly to the phone by default (it can hold 300)?

How Do I Disable Or Change The Camera Shutter Sound On My SGH-t509?
To change the camera’s shutter sound, on the SGH-T509 handset, follow the steps below:
While in standby mode, press the silver camera button located on the right side of the SGH-T509 handset
Press the left soft key for Options
Select Settings (7)
Select the Shutter Sound, using the navigational keys
Select the desired shutter sound, using the navigational keys
Press the left soft key for Save to save shutter sound changes

That's the problem:
the only options are
Shutter1
Shutter2
and Shutter3
