Choose - #5 Protocall Settings, inside this menu.
Choose - #6 MMS settings and choose enable email.
Hit the save button at the bottom.
Press the back button until you see Internals menu.
I set up a POP3 email account entering all information required for an email account to function properly.
HOWEVER, the phone will not display the email account that you just set up.
I think you have to set up a Profile for the email to use to gain access to the network, which I have not figured out yet.
Perhaps, some other people here can figure this out the rest of this puzzle and post the results here.
Any help appreciated

Configure the Mobile Email Client for the Samsung Eternity (A867)
Goal:
Configure the Mobile Email Client for the Samsung Eternity (A867)
Change:
All data usage charges are billed based on the subscriber's data rate plan.
Fix:
Samsung Eternity (A867) Keypad Layout
Prerequisites
Users must have an e-mail account registered with one of the supported ISPs.
The device must be able to access MEdia Net, as Mobile Email requires sufficient signal strength and GPRS data availability to connect to mailboxes.
The device must be able to receive text messages (SMS) in order to use the alerts functionality of the Mobile Email application.
Procedure
From the standby screen, tap Menu.
Tap Messaging.
Tap Mobile Email.
Tap the desired e-mail provider.
NOTE: The Mobile Email application is capable of storing multiple accounts for the same service provider.
If the desired e-mail provider is not listed, tap Other providers.
If an e-mail account is already configured, tap Add Account, then tap the desired e-mail provider to add a new account.
To edit an existing account, tap the account name, tap Options, and then tap Edit Account.
If this is a first-time setup, the "Terms of Service" for the selected e-mail provider will display. Tap I Agree to continue.
Fill in the username and password fields accordingly. Leave Remember me checked in order to store the password (this is optional), then tap Sign In.
NOTE: Usernames and passwords may be case-sensitive or contain special characters. Validate that the proper characters are being entered.
If the login is successful, the selected e-mail Inbox will be displayed.
NOTE: If the login was unsuccessful, an error message will be displayed. Please re-validate the username and password, and then try again.
Test the account by sending an e-mail.

I found mMail at the getjar website and it works on my Samsung Eternity. I can now get my POP3 emails with no problem. That site has tons of programs and will let you know which ones work for those that have tried them works with each phone. You can download it right to the phone and it is simple to install and use.
