My phone was stolen in the rankest conditions. Will they be able to continue to use my phone long after my new one comes in the mail? I have insurance, so I shouldn't care, but something inside me detests the idea of their using my phone. I feel violated.

Let's just hope you dind't have any data saved to that. It's generally a good idea to keep a little card case in your pocket with date that you plan to use on your phone and plug it in only when you wanna use it. THat's what I started doing after someone pick-pocketed my LG back in Flagstaff.
